Welcome to Cured Orange

Cured opened its doors in 2018, the vision of third generation smallgoods maker and butcher Stefan Birmili. With a heritage of European Charcuterie, and in conjunction with one of Sydney's oldest European butcheries 'Rudis' (established by Rudi Birmili in 1982), Stefan has made the Central West town of Orange his family home.

Being close to the fantastic produce that we use in our wide range of products gives our product a quality that is in keeping with the finest of traditional European recipes. 'Cured' has become a destination for locals and tourists alike, offering charcuterie platters, smoked meats, European sausages and antipasto meats that perfectly match the local wines and gourmet foods for which Orange has become renowned.
